Ohio

The Buckeye State sits between Indiana to the west and Pennsylvania and West Virginia to the east and is separated from Kentucky by the Ohio River. Michigan and Lake Erie border Ohio to the north. When Ohio was opened up to settlement in 1785, many of the first homesteaders arrived to stake their claims by floating down the Ohio River from Pittsburgh. Much laborious clearing of the land was necessary before farming could begin. Today, Ohio is a key part of the Midwest’s Corn and Grain Belts. At the turn of the 19th century, John Chapman, better known as Johnny Appleseed, began his tree-planting campaign in Ohio; he set up nurseries throughout Ohio and in parts of Illinois and Indiana. By the mid-1800s, before Chicago was “hog butcher for the world,” Cincinnati was known as “Porkopolis” because of its importance as a meat-packing place. Modern residents of Cincinnati can boast of a trademark dish: Cincinnati Chili. It comes any of "five ways": as a straight-up bowl of chili, served over spaghetti, and topped with beans, cheese and/or onions. It is thought to have been the invention of Greek immigrants.

Microwaved Potatoes Lyonnaise

Reviewed on Nov. 18, 2008 by Laura
Oh my are these good. My husband said he honestly can't tell the difference between these and the Lyonnaise potatoes at Ruth's Chris Steakhouse. I was looking for a potato side dish to make in the microwave while a pork loin was roasting in the oven. My tips: I doubled the onion, thinly sliced three fresh cloves of garlic, used 4 TBSP real butter, left the potato skins on, and my best tip is to use red pepper. Even if you don't like hot things, it doesn't really make it hot, just brings out the flavor. I use my palm to sprinkle the red pepper in first, and THEN add to dish. Just wash hands so you don't get pepper in eyes. These are a keeper... thank you! Enjoy!

Caramel Apple Pork Chops

Reviewed on Nov. 18, 2008 by BROOKSANDBRIANA
An instant favorite! I broiled the chops while cooking the apples on the stove. I boiled a large sweet potato at the same time for mashed sweet potatoes. Start to finish was 20 min for the whole meal! I did double the sauce, but I think the totally depends on the size of your apples. I also think broiling or grilling is always best for pork chops. They have to cook fast or they dry out.
