The flags of many nations have flown over the Lone Star State. Texas was even its own republic briefly. So it only makes sense that Texas should have a rich and diverse culinary heritage. This is big beef country. Texas gave us the cattle drive, the chuck wagon dinner (from which we get chicken-fried steak), and the iconic longhorn steer, though today the durable but not particularly tasty longhorn has been replaced by more flavorful breeds like Angus, Hereford, and Brahma. Traditionally, Texas barbecue is a slow-cooked affair using tougher cuts of beef, primarily brisket, over a wood fire. Of course, Texas is also the home of Tex-Mex cuisine. As the Spanish pushed northward from present-day Mexico, they brought with them an evolving cuisine. What had begun as a fusion of Spanish and Meso-American cooking was further influenced at the hands of Tejanos, Anglo ranchers, and others. The resulting hybrid cuisine would eventually become known as Tex-Mex. Culinary creations that Tex-Mex can call its own include beef fajitas, crispy tacos, nachos, chili con carne (hold the beans in Texas!), and the concept of the enormous combination platter.

Orange Pumpkin Loaf

This is the ultimate pumpkin bread! Everyone who sampled it was won over on first taste! The combination of flavors is genius - don't change a thing the first time you make it. The spices are perfectly balanced - I'm not crazy about cloves, but follow the recipe and you will see what I mean... And always bake an item until it is done - ovens can vary so much that it is usually not possible to say exactly how many minutes to bake something. Learn how to test by touch and using a cake tester, as well as by how the sides shrink from the pan, and you will find the perfect time for your oven. You MUST try the loaf!

Slow Cooker Kielbasa and Beer

Wow......I had high hopes for this recipe but I couldn’t even eat it. I think the biggest thing is to not use kielbasa but a polish sausage. I was a little confused when other reviews said to brown the kielbasa. Any kielbasa i ever had has a real soft skin...not something easy to brown. My kielbasa was ready to liquefy after 4 hours of cook. I used Fat Tire beer which I like to drink....but I just couldn’t eat this. My husband said he will eat the leftovers but I think he said it to be polite. Do yourself a favor and skip this one....or have a pizza ready for back up.

Easy Chocolate Chip Pound Cake

I wouldn't really consider this to be a pound cake, more like just a yellow cake (I used vanilla pudding rather than chocolate because it's what I had on hand). Actually, I think it tastes like a cake version of chocolate chip cookies. People loved it - who doesn't love cake and chocolate? - and my classmates requested I bring it for the next pot luck. It's quite sweet, and it tasted to me like a cake-mix cake more than others I've made. I made mine as mini-bundts (so cute!) and I think it took about 15 minutes less than the lowest recommended time, so about 35 minutes I think. This is definitely easy and quick, but I think next time I'll just make the poundcake from scratch. There's just nothing like the real thing.
