Eggplant Parmesan II

This was good. I think I did the eggplant slices too thin, they really fell apart when browning them. I just threw some pasta in to serve and it turned out good. Next day we ate without pasta and it tasted good on its own.

Imitation Crabmeat Salad

This was not bad but, I am still looking for something like the salad I get at the deli of the grocery store. The Ilalian dressing added an interesting flavor, it took some getting used to...I will try some of the other recipes before making this one again.
